Urban dining with a clear conscience, Thana Rosticeri cooks up seasonal meals with local produce.
If you spare no effort to indulge in non-GMO food that is free of pesticides and unprocessed flavours then look no further than Thana Rosticeri. Enthusiastically embracing the farm-to-table concept, this new restaurant works closely with small farmers and producers in Kosovo and Albania to offer daily menus with seasonal ingredients.
Located off the beaten track in Dragodan’s quieter neighbourhood, next to Bike Friendly Cafe & Shop on Bashkim Fehmiu street, Thana Rosticeri is a tasty, mid-range spot for casual lunches and dinners, offering traditional Albanian cuisine with a modern twist.
The restaurant’s interior merges urban and rustic features and proudly showcases a sprawling self-service bar that separates the open kitchen from the rest of the dining area.
Paying homage to Thana the Illyrian goddess of the forests, which not only adorns its logo but stretches across the walls in the dining room, the restaurant stands out as one among few businesses that is both owned and run entirely by an all-women staff.
In the spirit of know-your-farmer, know-your-food, the menu informs guests where most of the ingredients originate from.
When Prishtina Insight visited, the daily menu featured a range of “Thana” sandwiches. One was stuffed with slow-cooked beef from a farmer in Istog, wrapped in rocket leaves and pickles, and topped off with a mixture of sour-cream, carrot sauce and mustard, while the vegetarian sandwich was filled with chewy squash, carrots and peppers from a farmer in Peja, jazzed up with olive oil and wild oregano.
Each sandwich is served with homemade pita bread and typically comes with a small salad, and homemade kos.
If you are craving comfort foods, be sure to try Thana’s nourishing soups. On offer was a hearty chicken broth with sliced-up crepes, a la Frittatensuppe, and a warm bowl of potato and kale soup, sprinkled with grilled mushrooms that added an autumnal note.
Thana also prides itself on offering freshly made jufka with free range eggs from the village of Novosella – and rightly so. The daily pasta special was served with a lightly spiced veggie sauce, featuring pumpkin from Radullloc and finely chopped walnuts from Novosella at a price of 5 euros.
To accompany your dinner, Thana offers different homemade refreshments from ayran and tangy lemonade to tomato juice whizzed up with garlic and olive oil, all prepared daily, ranging from 0.8 to 1.0 euros.
Finally, you can indulge guilt-free in Thana’s healthy dessert offerings. Filled in small glass jars, try their creamy natural yoghurt with a sugar-free raspberry sauce, garnished with fresh mint leaves, or a relaxed spin on the traditional revani, made with layered cake soaked in honey-sweetened milk and walnut sprinkles. Both are just the right amount to satisfy your sweet tooth for 2.5 euros each.
